Gary, I second your opinion about "Forensic Computing" by Sammes and Jenkinson. In addition to (very) thoroughly covering disk functions and formats, they introduce issues relating to handheld devices. For more advanced aspects of forensic analysis, I recommend the "Handbook of Computer Crime Investigation: Forensic Tools and Technology" coming out in mid-October.
