I can only speak for the UK here, but if you're going to the trouble of getting equipment to crack/break these kind of transmissions between fone & base station, you've gone way past the opportunist attack - the lucky find on the baby monitor or the random scanning. At least in the UK you're better off just splicing into the phone line that comes out of most houses here (if you're on BT), or open the box in the road and break into that (if you're on cable). If you're going to this much trouble, you've got a specific target/purpose in mind.
