Short version: you can't, period.

Longer version: only by keeping your e-mail address effectively secret. 
The spammer can put any "From:" line they like, and they often choose a 
victim from among their spam target lists. Today you are the lucky 
winner. Tough. Write your congressman and demand effective spam 
legislation, not this wussy "opt out" crap.
